The best broth that I've ever made was from two pig feet. It was filled with so much gelatin and glycosaminoglycans that it became completely gelatinous at room temperature. Using parts of the animal that have very little meat, but a lot of cartilage, ligaments, tendons, and skin is the best way to make bone broth that is filled with gelatin and glycosaminoglycans.
